for our 2012 bin 7, we’ve sourced a bean so prized, we couldn’t bear to blend it. the 2012 kenya gatina estate peaberry proves that the finest kenyan coffees truly are in a league of their own.

mild: this blend consists of two central american coffees paired with an excellent sumatran coffee helping create a seemingly mild and balanced cup that yet still exhibits some complexity and hint of boldness. medium body with after notes of milk chocolate and slight herbal sweetness make this coffee easily enjoyed by almost every customer.

mild: a light roasted coffee blend that will showcase many hidden taste attributes often overshadowed by roasting to a darker shade. this blend was created with the east coast cinnamon style of roast profile in mind. ours is just a pinch darker but it still allows for all the brightness and acidity normally reserved for that "new england" cinnamon roast style of coffee. with costa rican coffee encompassing a majority of the blend, it hits the taste buds with an immediate sparkle and palate pop that is as much the coffee varietal as it is the lighter roast profile. this cup delivers a fuller body that has a sweet nutty and a slightly citrus flavor with medium to high acidity. it is well balanced and is not too heavy on the palate. excellent when brewed as espresso.

smooth: our most popular blend and of course tom’s favorite. this is the premier coffee used in all of our retail locations as well as with many of our wholesale partners. while tom has held this blend sacred for over twenty years the complexity of three distinct coffees keeps the taste fresh year after year and continues to stand the test of time. this three bean blend, comprised largely of costa rican coffee (btw tom’s favorite single origin coffee) known as being the "perfect" coffee because it has dynamic acidity, solid body and robust flavor as well as being equally balanced, is complemented with central american and indonesian coffees which add further depth and character. this cup is bold and bright yet not over the top, although it will penetrate any milk based drink or flavor to showcase coffee flavor first. mouth feel is crisp and lively with high citrus notes in the first sips. followed by a slight bittersweet chocolate finish. a clean cup rounds out our most classic coffee blend.

smooth: our decaffeinated house blend processed 100% chemical free. let’s just say we are picky about chemicals and would rather not have you consume them. we do what we can to keep our customers healthy.

smooth: this boutique coffee is grown the south-central huila district. this coffee is exclusive arabica typica, shade grown at 3000+ feet above sea level and exclusively sun dried. with excellent body, layered flavors and intensity reminiscent of a great kenyan coffee we roast this coffee to a mid-city roast to highlight these tremendous flavor attributes and not mask them in a darker roast profile. this allows the layers to unfold through the first sips. a truly complex layered colombian which is a rarity most times. you will notice the intense flavor of caramel with a hint of sweet baked molasses, and a delicate butter finish. no bitterness throughout the cup. limited supply available for the first half of 2011. enjoy.

smooth: our most popular drip blend, an excellent drip coffee that has a great winey start, followed by a heavy bodied floral flavored brew that has been imitated by many other coffee roasters. nice compliment but we feel of course that the original is still the best.

smooth: this european prep nicaraguan is some of the most delicious nic we have tasted in a long time. grown in the el horno and la tablazon, dipilto, nueva segovia regions at 1250 meters plus, this coffee has high notes of buttery bittersweet chocolate, with a hint of brightness featuring an orange citrus tint. if you love centrals than this is a good bet for you. not sure what european prep means: (depulped in pinhalense machines, fermented for 12 hours in cement tanks, washed in clean fresh water, dried in machine driers down to 42% moisture and finished on full-sun patios.

a thomas hammer ecobrew. smooth: this decaffeinated, 100% chemical free pre-blended coffee combines a central and south american coffee that produces a milder palate feel but still delivers a very complex taste with balanced body, medium acidity.

a thomas hammer ecobrew. smooth: this traditional indonesian coffee delivers that fantastic earthy flavor and palate feel that one expects. buying from one of the top farms in sumatra this grade 1 coffee delivers a sweet honey infused aroma, heavy body, with slight caramel buttery undertones.(also available in fair trade/organic)

smooth: ethiopian yirgacheffe the finest the country has to offer is virtually unknown by most people. this intense feeling coffee enhances the palate with its very distinctive floral bouquet, wine-like syrupy body, notes of tangerine citrus with an overall smooth mellowness that’s unique unto itself. ethiopian yirgacheffe is a washed coffee in which the coffee beans, after having the outer layers of skin and fruity pulp removed, are soaked up to 72 hours in fermentation tanks. beans treated with this "wet" method will generally have a higher acidity, a cleaner winey or floral flavor, and more of a full body than the beans processed by the dry method.

smooth: new! this classic guatemalan washed coffee from the huehuetenango region, elevation 4000 ft + has an exceptionally clean and bright taste as well as medium-heavy body to make this a very good guatemalan coffee. the flavor profile delivers those classic chocolate and nutty undertones, with light dusting of fruit essence. generally the acidity is harsher in these central coffees but the pahlu delivers a more refined acidic feel ending with slightly caramel finish. you will not be disappointed with this classic coffee.

bold: an over the top french roast ladened blend that will satisfy even the most critical palate. a blend of french roast and central american coffee, it delivers a deep, bold flavor of smoky greatness, with medium body, slightly lower acidity and a slight taste of cocoa butter. this blend has been produced since 1995 and is a classic.

a thomas hammer ecobrew. bold: one of famous dark roasted blends that is only a few years old but set the bar for what eco-brew sustainable coffees can taste like. with an aroma of brown sugar this rich and bold cup delivers flavors of bittersweet chocolate with hints of maple syrup. it finishes nicely with a lingering smokiness. this is simply one of the best coffee blends we have to offer.

bold: designed primarily for the espresso machine but can be dripped for those that are seeking a bold but low acidic slightly smokey cup. a classic french style roast creates a layered flavor profile of slight nutmeg and ginger and liveliness not normally found in this roast style.

bold: what can we say,we churn and burn to produce this classic non-acidic dark brown brew with an oily sheen that speaks bittersweet loud and clear. while it is true that the green coffee used for french roast can change, the secret to producing a french roast coffee that delivers that smooth but smokey mouth feel is all in the hand of roasting. over the past twenty years, we feel that we have perfected this roasting style and continue to produce some of the finest french roast coffee on the market.

a thomas hammer ecobrew. bold: we made the puzzle slightly more complex by taking a great coffee and turning up the heat on it a little and creating a darker roasted sumatran that tones down the acidity but darkens the taste to hint at slight caramel tones only brought out with the flame.

this only slightly roasted coffee is for those who are already in the know of "white coffee" and would like a little extra jolt of caffeine and don’t care for the taste of coffee. the liquid brew similar to wheat grass is very earthy and nutty flavored, with low acidity and no body. best when mixed with a flavor and milk the end result is a caffeinated beverage without the taste of coffee.
